Color Swatches
You can to name the variant variant color that the browser can display in the variation section of each product: link
If not: the theme allows you to customize colors for each product variation.
Steps
In the theme editor (Customize), click Theme settings
Locate Color Swatches
Make necessary changes
Save
You can see an example:
Select the color variant name you want to change
In Customize add the color to change.
